I've been playing around on the NASA education pages, looking for good educator stuff. I found the Fit Explorer Challenge. This is a series of physical training exercises that are tied with astronaut physical requirments.
The Challenge includes the Base Station Walk Back, Crew Strength Training, Do a Space Walk,Jump for the Moon, and Mission: Control
Each activity has a two page mission handout, a mission log and an educator guide. There is also a section on the science of physical activity. Right now there is only one module complete - a lengthy exploration of bone strength. At least three modules on astronaut nutrition are planned.
There is lots of other great stuff on the NASA pages. There is also a 50th Anniversary essay contest.
